Winemaking - Our Approach

We’ve never really believed there is a single way to make great wine, in the same way we’ve never fully trusted a recipe.

Instead of rejecting tradition or chasing trends, we keep an open mind continuing to learn about each unique block through our small-batch winemaking approach.

Our hope is not to leave our signature on a vineyard, but to let each place and season speak for itself.

This means farming with care, harvesting thoughtfully, and making hundreds of small decisions that favour transparency over winemaking artefact and elegance over power.

Ultimately, we strive to make wines where complexity feels naturally derived, wines made for the table, where we believe they belong.

In the Winery
Our work is centred on sustainably farmed vineyards across McLaren Vale, the Adelaide Hills and Clare Valley.

A small collection of remarkable old vineyards whose growers we are privileged to work alongside, together with our own 11 hectare The Chase Vineyard, perched high above the Onkaparinga Gorge provide the diversity, character and individuality that define our wines.

Every vintage begins long before harvest, with detailed hand work throughout the growing season encouraging balanced vines, modest yields, and fruit that retains freshness, natural acidity and character.

Harvest is rarely a single event. We often return to the same vineyard several times, picking individual parcels as they reach their ideal balance. Each parcel is fermented separately, often across multiple small ferments, building layers of texture, tannin and aroma before coming together as the final blend.

Indigenous yeasts, traditional open fermenters, concrete eggs, varying levels of whole bunch and extended time on skins are all employed according to the needs of each parcel rather than a predetermined formula.

Rather than trying to control every outcome, we leave room for thoughtful risk. Every ferment is observed, tasted and handled individually, allowing each parcel to find its own balance.

Maturation takes place in concrete, stainless steel and seasoned French oak of varying sizes, each chosen to support the wine without overshadowing the personality of the vineyard.

From the first pruning cut to the final bottle, every decision is made in pursuit of freshness, balance and quiet complexity.

Our responsibility is simply to shut up and listen.

Let the vineyard do most of the talking.

Vintage Notes

We hope our wines speak clearly of their vineyard origins, but this voice is always coloured by the conditions and character of each particular vintage.
